Ingredients:
- 350 grams (12 ounces) spaghetti
- 150 grams (5 ounces) pancetta or bacon, diced
- 2 cloves garlic, minced
- 2 large eggs
- 100 grams (1 cup) grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.
- In a large skillet, cook the diced pancetta or bacon over medium heat until crispy and golden brown, about 5-7 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
- In a small bowl, whisk together the eggs and grated Parmesan cheese until well combined.
- Remove the skillet from heat and add the cooked spaghetti to the pancetta/bacon and garlic mixture. Toss to combine.
- Quickly pour the egg and Parmesan mixture over the hot spaghetti, tossing continuously to coat the pasta evenly. The heat from the pasta will cook the eggs and create a creamy sauce. If the sauce seems too thick, add a splash of reserved pasta water to loosen it.
- Season with salt and black pepper to taste.
- Serve the spaghetti carbonara immediately, garnished with chopped fresh parsley. Enjoy!
