Spaghetti Carbonara




Ingredients:

  • 350 grams (12 ounces) spaghetti
  • 150 grams (5 ounces) pancetta or bacon, diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 100 grams (1 cup) grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.
  2. In a large skillet, cook the diced pancetta or bacon over medium heat until crispy and golden brown, about 5-7 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. In a small bowl, whisk together the eggs and grated Parmesan cheese until well combined.
  4. Remove the skillet from heat and add the cooked spaghetti to the pancetta/bacon and garlic mixture. Toss to combine.
  5. Quickly pour the egg and Parmesan mixture over the hot spaghetti, tossing continuously to coat the pasta evenly. The heat from the pasta will cook the eggs and create a creamy sauce. If the sauce seems too thick, add a splash of reserved pasta water to loosen it.
  6. Season with salt and black pepper to taste.
  7. Serve the spaghetti carbonara immediately, garnished with chopped fresh parsley. Enjoy!
