Spicy Green Chili Chicken Curry
- Ingredients:
- 500g chicken, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 2 onions, finely chopped
- 3 green chilies, sliced
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 teaspoon ground turmeric
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt to taste
- 1 cup coconut milk
- Fresh cilantro leaves for garnish
- Instructions:
- Heat oil in a large pan over medium heat. Add onions, green chilies, garlic, and ginger. Sauté until onions are soft and golden brown.
- Add turmeric, coriander, cumin, chili powder, and salt. Cook for 1-2 minutes until fragrant.
- Add chicken pieces to the pan and cook until browned on all sides.
- Pour in coconut milk and bring to a simmer. Cover and cook for 20-25 minutes until chicken is cooked through and tender.
- Garnish with fresh cilantro leaves before serving. Serve hot with rice or naan bread.
