  1. Green Chili and Cheese Quesadillas



    • Ingredients:
      • 4 large flour tortillas
      • 1 cup grated cheese (cheddar or Monterey Jack)
      • 2 green chilies, thinly sliced
      • 1 tomato, diced
      • 2 tablespoons chopped fresh cilantro
      • Salt to taste
      • Cooking spray or vegetable oil for frying
    • Instructions:
      1. Preheat a large skillet over medium heat.
      2. Place one tortilla on the skillet and sprinkle with a quarter of the grated cheese, green chilies, diced tomato, cilantro, and a pinch of salt.
      3. Top with another tortilla and press down gently.
      4. Cook for 2-3 minutes on each side until golden brown and crispy, and the cheese is melted.
      5. Remove from the skillet and cut into wedges. Repeat with the remaining tortillas and filling ingredients. Serve hot with salsa and sour cream.
