Green Chili and Cheese Quesadillas
- Ingredients:
- 4 large flour tortillas
- 1 cup grated cheese (cheddar or Monterey Jack)
- 2 green chilies, thinly sliced
- 1 tomato, diced
- 2 tablespoons chopped fresh cilantro
- Salt to taste
- Cooking spray or vegetable oil for frying
- Instructions:
- Preheat a large skillet over medium heat.
- Place one tortilla on the skillet and sprinkle with a quarter of the grated cheese, green chilies, diced tomato, cilantro, and a pinch of salt.
- Top with another tortilla and press down gently.
- Cook for 2-3 minutes on each side until golden brown and crispy, and the cheese is melted.
- Remove from the skillet and cut into wedges. Repeat with the remaining tortillas and filling ingredients. Serve hot with salsa and sour cream.
